Family Style Chicken Fajita Platter
Take advantage of our fantastic Tuesday Fajita sale with this family style fajita platter! A perfect way to feed a family of four for less than ten dollars per person. Featuring our house made fajita mix and a few additional items from the marketplace, this perfect family dinner is ready in less than 20 minutes!
Ingredients:
- 1.5 pounds Look’s Marketplace chicken fajita mix 
- 1 avocado 
- 1 lime 
- 1 package La Perla tortillas (8-10 tortillas) 
- 1 container Kalona sour cream 
- 1 package La Perla Spanish rice 
- 1 package La Perla beans 
- 1 package Tillamook Triple Cheddar cheese, shredded 
- Neutral oil (for cooking) 
- Salt and pepper (to taste) 
Instructions:
- Prepare the Vegetables: 
- Cut the lime into wedges. 
- Slice the avocado in half. Remove the pit and scoop out the flesh with a spoon. Slice the avocado and set it on a plate. 
- Season the avocado slices with a little salt and pepper. 
- Cook the Rice and Beans: 
- Cook the La Perla Spanish rice according to the package instructions. 
- Warm the La Perla beans in a separate pot or microwave according to the package instructions. 
- Cook the Chicken Fajitas: 
- Heat a pan with a little neutral oil until it starts to smoke. 
- Add the chicken fajita mix to the pan. Cook in two batches if necessary to achieve good caramelization. 
- Stir occasionally and use a spoon to scrape up any browned bits from the bottom of the pan. 
- Once the chicken is cooked through and caramelized, remove from the pan. 
- Warm the Tortillas: 
- Wrap the La Perla tortillas in a piece of aluminum foil and warm them in the oven or on a dry skillet over low heat. 
- Assemble the Fajita Bar: 
- Arrange the warm tortillas, cooked chicken fajitas, Spanish rice, beans, shredded Tillamook Triple Cheddar cheese, and sour cream on a serving table. 
- Place the avocado slices and lime wedges alongside. 
- Serve: 
- Serve the fajitas buffet-style so everyone can build their own tacos with their preferred toppings.
