Coconut Shrimp Curry

Ingredients:

  • 1# Peeled and Deveined Shrimp
  • ½ Sweet Green Pepper, sliced
  • ½ Red Onion sliced
  • ½ Jar of Coconut Curry Simmer Sauce
  • 1 Tbls, chopped fresh cilantro.

Procedure:

  1. Sautee the onions and peppers in a pan over high heat until lightly caramelized.
  2. Add shrimp and continue to cook until the shrimp start to curl, about 1 minute.
  3. Add 1/2 Jar of the simmer sauce and ¼ cup of water. Simmer until the shrimp are cooked through, about 4-5 minutes. Add cilantro.
  4. Serve with white basmati rice.
