Coconut Shrimp Curry
Ingredients:
- 1# Peeled and Deveined Shrimp
- ½ Sweet Green Pepper, sliced
- ½ Red Onion sliced
- ½ Jar of Coconut Curry Simmer Sauce
- 1 Tbls, chopped fresh cilantro.
Procedure:
- Sautee the onions and peppers in a pan over high heat until lightly caramelized.
- Add shrimp and continue to cook until the shrimp start to curl, about 1 minute.
- Add 1/2 Jar of the simmer sauce and ¼ cup of water. Simmer until the shrimp are cooked through, about 4-5 minutes. Add cilantro.
- Serve with white basmati rice.
