Smithwick's Braised Corned Beef
Corned Beef Brisket
Ingredients:
1 4# Corned Beef Brisket
1 Bottle of Smithwick’s Beer
1 Quart Beef Broth
1 Small Head of Cabbage, cut into ¼ sections
4 Carrots, peeled and cut into 2 inch sections
3 Potatoes, cut into quarter pieces
2Tbls Whole grain mustard
1tsp Honey
Procedure:
1) Place Brisket, Beer, Broth, and spice packet in an oven-proof pot and bring to a boil.
2) Cover and place in oven at 300°, for 3 hours and 30 minutes or until very tender.
3) Remove the brisket from the liquid and place on a cutting board.
4) Add vegetables to the pot and simmer on the stove top until the vegetables are tender, about 20 minutes.
5) Remove the vegetables and add the mustard, honey and black pepper to the sauce.
6) Serve by slicing the Brisket and serving with vegetables and a spoonful of sauce.
